Last
night we had meatballs and hid veges in them - tiny tiny bits of
broccoli, onion, garlic and grated zucchini. Esther really likes eating
sausage, and eats happily with her fingers, so I thought this would be
an easy way to get a balanced meal in to her. I made the meatballs
slightly elongated as well, to make them easy for her to hold. I also
did risone, which is great for both kids, with pasta sauce and corn.
Esther pretty much ate this with her fingers as well.

Lasagne with spinach and chicken
Last night I made a lasagne that was inspired by a standard vegetarian lasagne, but I snuck in a little bit of chicken. I combined spinach, grated zucchini and small amount of finely chopped shredded chicken, mixed pasta sauce with tinned tomatoes, and layered it with the pasta and cheese sauce.

Mince Pies
Last
night we had leftover bolognaise too! Someone else had made it and put
it in our freezer, and it served us well on spaghetti the night before.
But last night I put it in to puff pastry in muffin tins and made mini
mince pies. Yum! I have never been a fan of mince pies but think I could
like a really good homemade one. And indeed these were good. I sprinkled a little cheese on top of the mince, and we had some corn on the side.
Pizza
Last
night I made one of Kent's favourites - pizza. Bread machine dough with
our usuals, mushroom and red capsicum, and as a bonus, some leftover
sausage. Tomato paste and tomato sauce with oregano as a base and yes,
plenty of cheese. I think everyone should have the necessary to make a
homemade pizza when they feel like it, even if it means having some
shop-bought bases in the freezer.
Fish Pie
Last
night I made fish pie. Fish and mixture of veges and a white sauce with
a drop of cheese and white wine. Fresh herbs. Topped with mashed potato
and grated cheese + breadcrumbs. This can also be topped with pastry of
course, or my current favourite is chunks of homemade bread drizzled
with melted butter - they go lovely and crispy after baking.
