Crock Pot chicken thighs
Can't beat the crock pot. Chicken thighs, spuds, carrot, onion, and of course yams. Sprinkle of soy sauce, chicken salt seasoning and mixed herbs. Cover veges only with water, chicken perched on top. Eight hours on low heat.
Fish and couscous
Last night we had a yummy dinner. I cooked some diced capsicum and corgette then added it to cous cous with some cumin and feta, then crumbed fish on top with lots of lemon squeezed over. Steamed veges on the side :) Was super yum!
Chilli
Last night we had chilli made in the slow cooker - really quick and easy and lasts for two nights with some left over for the freezer! :)
Moroccan Casserole
Last night we had a disaster! Moroccan casserole, beef with raisins, apricots, onions and spices - should have been delicious. I suspected the recommended cooking temp and time would be too long. However, I didn't trust my instincts. Instead i followed the recipe and went out for 2 hrs! Came home to a dubious smell of an almost burnt, very dry dish. Virtually inedible . . . but ate it anyway :) The cous cous with blackcurrant side was quite nice though.
Crock Pot Chicken
Well, not the crock pot, but chicken thighs that spent 7 hours in it along with kumara, onion and carrot. Oh, and a bit of corn and broccoli on the side.

Mince Pies
Last night we had leftover bolognaise too! Someone else had made it and put it in our freezer, and it served us well on spaghetti the night before. But last night I put it in to puff pastry in muffin tins and made mini mince pies. Yum! I have never been a fan of mince pies but think I could like a really good homemade one. And indeed these were good. I sprinkled a little cheese on top of the mince, and we had some corn on the side.
Spaghetti Bolognaise
The girls loved it too and we had the leftovers tonight.
Chicken Pasta
Last night we had courgettes, chicken, mushrooms red onions and canned tomatoes over pasta. I had a craving for courgettes and tomatoes!
