Yum, that looks amazing but really easy. I'm about to make a list for next week's meals - I'm tempted to try it.
It was, as long as you roast the peppers in advance. I used a red and a yellow capsicum (that's what I had in the fridge) and I had a tub of pesto dip (I think maybe red pepper and cashew flavour or something similar) that I used for the topping. If using a pesto dip again, I'd use a bit less than the entire pottle that I slathered on, but lots of different things would work. I'll definitely do it again.
