Red Pepper Fish
Well, this is the first time I have posted here, but I just had to share what we had for dinner last night. It was SOOO delish and quick and easy. The kids gobbled it up, as did we. Annabel Langbein's Great Food for Busy Lives often saves me when I can't think of what to cook. We had this: CLICK HERE with boiled new potatoes. Yum yum yum is all I can say. I recommend trying it!

  2. It was, as long as you roast the peppers in advance. I used a red and a yellow capsicum (that's what I had in the fridge) and I had a tub of pesto dip (I think maybe red pepper and cashew flavour or something similar) that I used for the topping. If using a pesto dip again, I'd use a bit less than the entire pottle that I slathered on, but lots of different things would work. I'll definitely do it again.
